It was a day like today in June of 2007 that we published the first print issue of Vermont’s Local Banquet magazine. The word localvore had newly been coined and folks were engaged in localvore challenges in an effort to reduce the distance food travelled, thus the carbon footprint, and to support a growing farming economy.

As the days shorten and the temperatures begin their march south, here in Vermont we are so fortunate to experience Mother Nature’s annual display. It’s always been our favorite time of year; full of abundance from the summer and with a hint of the bittersweet knowledge that winter is next up on the docket.

For the past several years now, we’ve composted our garden and kitchen scraps. With increased success, we’ve watched apple cores and tomato vines metamorphose into a rich, dark, crumbly hummus.
